About Aurion

The story of Aurion is the story of a group of visionary idealists who were concerned with creating a balance between nature and man based on the ideas of Rudolf Steiner. Two people, two enthusiasts, have become synonymous with Aurion, namely Inger and Jørn Ussing Larsen. Today, they are both deeply committed to Kornets Hus, Denmark’s first experience center for grain and food culture, and are no longer part of Aurion’s operations, but the spirit and ideas remain.
Inger and Jørn met each other in 1973 and shared an interest in biodynamics, but were
both frustrated by the lack of supply of biodynamic products on the market – or biologically dynami-cally grown products, as they were called. At that time, there was no talk of ecology, because the con-cept did not yet exist. So when the medals and Napoleon hats were piled on the counter in Jørn’s fa-ther’s pastry shop in Hjørring, Willys Konditori, Jørn experimented with making biodynamic breads that rose using the honey-salt method; with muesli in all its forms; with jam, cakes and much more. The very first honey-salt bread was actually baked in a gas oven in the allotment house.
Following the motto “when others won’t do it, you have to do it yourself,” Butikken Aurion was es-tablished in 1974. Thus, Aurion was created. It was alternative and driven by a set of values and a passion for good raw materials, which was quite unconventional at the time.

THE BAKERY AND THE MILL ON GULDAGER ROAD
In 1980, the bakery and mill in Guldager was established, and Jørn’s interest in grain was greater than ever before: the hunt for the primeval grain gained momentum. With the discovery of spelt in 1992, Aurion cemented its position as Denmark’s leading organic mill, and today we have more than 26 grains and seeds in our range – one of the largest in the Nordic countries.

All grain was then, as now, organic and biodynamic and primarily grown by Danish growers. In 1981, the Danish Organic Association was founded, and the rules for organic cultivation were estab-lished in 1987. But for Aurion, the rules were and are not far-reaching enough, and we place stricter demands on our organic growers than the standard Danish rules for organic cultivation. Our require-ments for suppliers are also very strict. Our production is approved by the Demeter Association, and we are proud that more than 60% of our products are biodynamic.
